Peppermint Candy Cane Cookies

I know I’m being really bad right now + posting something I shouldn’t but it’s Christmas time! + everything in moderation riiight?! Plus, I LOVE to bake + what better time to make some super festive cookies for everyone to enjoy this year! + they aren’t toooo toooo bad for you:)

These Peppermint candy canes are seriously the cutest frickin’ cookies ever! + they taste soooo yummy (if you enjoy peppermint)! I found these cuties through Kristina of @lemonsandleisure. If you haven’t seen her insta, you’re seriously missing out. She’s a lovely wife/mother who lives a plant based, gluten free, mostly raw + vegan diet. So many UHMAYZING recipes to try out!

Peppermint Candy Canes (did I mention these are GLUTEN FREE…happy dance time!):

  • 2 1/2 cups gluten free, all purpose flour
  • 1 1/2 cups organic powdered sugar (1 of 2 downfalls in these precious babies but so worth it)
  • 1/4 cup almond milk
  • 1 tsp baking powder
  • 2 tsp pure vanilla extract
  • 1 tsp peppermint extract (Peppermint can be way overpowering so don’t add more than this + omit if you do not like peppermint)
  • 1/2 tsp salt
  • Red food coloring (the other downfall- try + find a natural one if possible!)

Combine flour, baking powder + salt in a mixing bowl. In your standing mixer (my favorite baking buddy!!), combine coconut oil, almond milk, peppermint + vanilla. Make sure both mixtures are well combined. Slowly add the flour mixture + mix until ball forms. Divide the dough evenly + leave half in your mixer. Add a few drops of red coloring + mix until desired color (I hate food coloring so I only added a bit + it made these a light pink instead of red). Wrap dough separately in seran wrap + refrigerate for about 15 minutes. Preheat oven to 350 degrees + prepare your candy canes! Take about a half of a TBS of each color + roll each into a thin strip. Twirl together + lay on a parchment covered baking sheet in the shape of a candy cane! Bake for 15-20 minutes!

JorBabe + I love a lil tradition + make sure we have an open night every year for some cookie makin’ magic. This year we had a special guest: one of my BFFFFs, Rachel. Jor calls me Martha (Martha Stewart) so we nicknamed our little “bakery” Martha + The Minions lmao! We had such a blast making these together!
